Roasted Cauliflower with Cacao & Cinnamon

Kellie Lin says: “Our friend, Shelly, had us over for dinner this week and made this dish. It was so wonderful, I wanted to share it with you. I’m documenting her recipe with a few of my own additions. I guarantee it is delicious!

Ingredients

  • 1 head of cauliflower (fresh) chopped into florets
  • 1/4 cup roasted cacao nibs (ground – use a coffee grinder)
  • 1/8 teaspoon clove
  • 1.5 teaspoons ground cinnamon
  • 7 peeled and smashed garlic cloves
  • 2 tablespoons olive oil
  • salt & pepper to taste

Instructions

1. Preheat the oven to 450 degrees.

2. Pour the olive oil into a large bowl and add the cauliflower, cacao, garlic cloves, and spices. Mix together, ensuring that the spices are evenly distributed over the florets.

3. Roast for 20-25 minutes or until tender.

4. Add salt and pepper to taste.
