Roasted Cauliflower with Cacao & Cinnamon

Ingredients
- 1 head of cauliflower (fresh) chopped into florets
- 1/4 cup roasted cacao nibs (ground – use a coffee grinder)
- 1/8 teaspoon clove
- 1.5 teaspoons ground cinnamon
- 7 peeled and smashed garlic cloves
- 2 tablespoons olive oil
- salt & pepper to taste
Instructions
1. Preheat the oven to 450 degrees.
2. Pour the olive oil into a large bowl and add the cauliflower, cacao, garlic cloves, and spices. Mix together, ensuring that the spices are evenly distributed over the florets.
3. Roast for 20-25 minutes or until tender.
4. Add salt and pepper to taste.
