I had a dream about Goji Berries and took it as a sign that I needed to get some into my diet. I know they’re healthy, delicious, and some regard them as a superfood. I searched the internet and found this recipe, which Kellie and I adapted from essentiallivingfoods.com together. As with all of the recipes we choose to share, it’s pretty quick & easy to throw together.

Ingredients

  • 1 cup wild rice (uncooked)
  • 1/2 cup soaked goji berries
  • 1/2 cup roasted cacao nibs
  • 1 cup cooked & rinsed chickpeas
  • 3 green onions, chopped
  • 1 tablespoon olive oil
  • 1.5 teaspoons apple cider vinegar
  • Juice of 1 lemon
  • Zest of half a lemon
  • Pink Himalayan Salt & Pepper
  • 1 tablespoon chia seeds
  • 1/4 cup chopped parsley

Instructions

1. Cook wild rice according to package instructions.

2. Place rice, chickpeas, goji berries, green onions, salt & pepper, olive oil, vinegar, lemon juice and lemon zest in a bowl and stir together.

3. Add chia seeds, parsley, cacao nibs and any other garnishes you like.
